HOW ITS MADE
1: Source and Prepare (절임)
We source all our cabbages and additional ingredients from local Korean farmers. We chop up the napa cabbages to bit size pieces and wash them. We then saturate the cabbages in salt water for 6-8 hours depending on various factors to develop the perfect flavor. The salty cabbage is then washed 3 times and rested for 24 hours. Whilst the cabbage is resting we prepare the remaining ingredients such as Korean Gochugaru, garlic, onion etc. We chop and grind them into a paste ready for the next step!
2. Chidaegi (치대기)
Chidaegi is the process of applying the Kimchi paste onto the brined cabbage. This process is done by hand with love by our experienced aunties! We then prepare the batches for the packing process!
3. Package & Ship
To prevent cross contamination and keep things hygienic we use special packing machines that fill up our steam cleaned jars. We then box them up and ship them from our factory in ChungCheongDo straight to Busan which then will be sent via a ship straight to Sydney,
