Therese's Kimchi Coleslaw
Serves 4 as a side
Dressing Ingredients
1 garlic clove- minced
2 tbsp rice wine vinegar
1 tbsp sesame oil
1/2 tbsp gochujang korean chilli paste
1/2 tbsp freshly minced ginger
1/2 tbsp soy sauce
1 tbsp sugar or honey
Instructions:
Combine all dressing ingredients in a small jar and shake to combine.
Set aside for a few hours to allow the flavours to infuse
Slaw Ingredients:
100g kimchi
1 carrot- scrubbed & grated
1 beetroot (raw)- peeled & grated
1/4 head white cabbage- thinly sliced
3 small radishes- scrubbed & thinly sliced
1 handful of pea sprouts
2 stalks spring onions- thinly sliced
1 tbsp toasted white sesame seeds
Instructions:
Prep all of the fresh vegetables and toss to combine.
Garnish with pea sprouts and scatter with sesame seeds & spring onions.
Drizzle the dressing over 30 minutes prior to serving.
